These mini chipit cookies are adorable, easy to make and oh so yummy! It’s kind of like a cross between a cookie and a macaroon and the ingredients are so simple! You might be thinking…why are they called chipits? To that I say; I don’t know. It’s like a “chocolate chip cookie jr.” type situation and chipit is its name. We put cocoa nibs in our chipits, but feel free to change it up and create your own flavour. I see cinnamon raisin or peanut butter chocolate happening in the future (spooky).
- 1/4 cup almond flour
- 1/4 cup finely shredded unsweetened coconut
- 2 tbsp honey
- 1 tbsp almond butter
- 1 sprinklin’ of cacao nibs
That’s it! Mix all ingredients together. Form into mini cookies and bake at 350F for ten minutes. So simple, yet so good.
